Every batch of hot sauce takes up to a month to make

Why so long? Because we carefully ferment a lot of our ingredients to bring out the best depth in flavor. In fact, Pepper Queen Farms hot sauces take way too long to make. But it shows in how tasty and varied in flavor our sauces are.

Think grape juice vs. wine

So why do we ferment some of the ingredients? Because lacto-fermentation is one of the best ways to turbo boost flavors. For example, fermented garlic has a less harsh but more complex and deeper flavor. Think grape juice made right away vs grapes fermented over time and turned to delicious wine.

Each batch of ingredients is carefully monitored for pH and used when maximum flavor is achieved.

After one to six weeks, the fermented and fresh ingredients are all combined and bottled, ready to “Fix Your Food!"
